Tuesday Tid-bits...

Amanda's office is giving her a "Little Girl Shower" in celebration of the very near arrival of our darling Little Luz! It is to be held this Friday and because she doesn't read my blog I can SAY that! (and because the girl who's throwing it for her told her not to make ANY plans for Friday!!! LOL!) Anyway... The most excited soon to be Nana in the WORLD has been invited to the big event - and I can't WAIT!!! I'm sO excited! It's going to be so much fun to see what all her work friends have gotten her! I guess I need to go SHOPPING too - to get something that she doesn't KNOW I've bought! Hmmmm....

A non-blogging friend shared a recipe with me the other day for a really YUMMY Enchilada Casserole. I made it last night for dinner and it was D-Lish-Us!!! And scrumptious too! I know ONE some of you like to get your hands on new recipes from time to time - and this one really IS worth having. I bought the wrong sauce - I bought taco sauce instead of enchilada sauce - and so I ended up MAKING homemade enchilada sauce... I don't know if that made a difference or not - but MAN it was GOOD! So... here's the recipe! Tell me... do you think it was put out by the Ortega people?


* 1 pound ground beef or turkey
* 1 small onion, chopped
* 2 cloves garlic, finely chopped
* 1 16-oz. jarORTEGA Salsa - Thick & Chunky (Medium)
* 1 can 16-oz.ORTEGA Refried Beans
* 1 can 10-oz.ORTEGA Enchilada Sauce
* 1 can 2.25-oz. sliced ripe olives
* 10 6-inch corn tortillas, sliced in half
* 2 cups shredded mild cheddar cheese, divided


Directions

PREHEAT oven to 375ºF.

COOK beef, onion and garlic in large skillet until beef is browned; drain. Stir in salsa, beans, enchilada sauce and olives. Bring to a boil. Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.

LAYER half of corn tortillas on bottom of greased 13x9-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat layers. Bake, covered, for 20 minutes. Remove cover; bake for additional 5 minutes or until bubbly and cheese is melted. Garnish with green onions before serving, if desired.

And by the way... I'm not sure how much fat or calories are in the brand name enchilada sauce - but MY sauce was fat free ... and very low calorie and sodium! The whole recipe was really WAY low fat!!! (well... I did use 2% cheese... and low carb tortillas!) Topped it with light sour creme too!

Oooohhh...I am so excited that they are going to do the "little girl" shower. That's just cool. The award is fun...and I can't wait to come back tomorrow.

How sweet is that?!!! A shower....and for such a wonderful event in everyone's lives!!!! [the enchilada dish looks scrumptious!!!] And psssst, I bet that serving dish is very pretty too. *smile*

A little girl shower!! WOW!! i know you have so much already bought for her that she is going to be the BEST DRESSED GAL in Maryland!! I know it is going to be a "hardship" for you to go and buy her something else. How about a baby doll? Does she have one yet...I suppose that will be for Christmas though. Every little girl needs a baby doll...Have a wonderful time. i will remember that YOU ARE WATCHING ME!! smile..Sandy

Fortunately I just have eaten ! This recepe is criminal delicious ! I can imagine that Dennis purred loud during supper !
I am busy to prepare the Cypber Halloween party for tomorrow. It is crazy what kind of stuff you find on Internet ! I think little Luz will be your biggest Christmas gift !!

Such a lovely idear having a baby girl shower I am sure between now and christmas it will be like the three kings bringing gifts for the darling one........what fun!
