Cookin' Up Some Trouble....
I "feel" trouble cookin'. It started a few days ago with the arrival of COLD weather in my area. COLD, in and of itself is a new phenomenon to me. I have not "felt" it for many many years! I have been well insulated by several layers of warm fat for soooooo long that I had forgotten what COLD really means! In days of yore, (last winter) I wore shorts and tee-shirts throughout the winter, only donning a light jacket or sweatshirt in the most brutal weather! However, it is not yet November, and I am finding myself sitting before you in socks AND slippers, (too big) sweatpants, and a hoodie! And I'm COLD! The temperature outside is reportedly 36 degrees -- but I'm sure they lie! It feels like 10! And if this is how my new body reacts to 36, what the HECK am I going to do when it DOES dip to 10??? Enough whining... you know I'm miserable!So... with this cold weather, I have noticed that my taste in food is changing. (huh?) Yes, dear reader... it's true! GONE is my love for fresh, crisp salads and apples! GONE is my satisfaction with a cup of yougurt! GONE is my yen for pretty much ANYthing COLD! (which happily also includes icecream...) I know longer wish for tuna and crackers for my lunch, but now I find myself wanting rice! Bowls and bowls of hot steamy rice! Covered with stew! Or covered with chili! Or just covered with gravy! Rice! Rice! Bring me MORE rice!!! ACK! Rice is my "comfort" food. And when I'm COLD I want to be comfortable! *SOB* ... How am I EVER going to reconcile my new eating lifestyle with my desire for comfort? Woe is me! (what does that mean? i know... i know... i am full of woe.. and i am!)
I am hoping that you can all HELP me. In recent weeks I have made some really scrumptious and satisfying verrrrrrry low fat and verrrrrrry low calorie warm stuffs! I've made a heavenly pumpkin soup! And darling daughter made REAL mexican chili! And Sunday I made a phenomenal chicken stew. THESE foods are not bad for me and if I can keep them away from the rice bowl will help me get through winter without re-gaining my pounds. (did i say MY pounds... no no ... i meant just pounds! they're not mine! i don't want them!) So... if you can all share with me some really YUMMY warm stuffs that you frequently enjoy in winter, even if they are not particularly low in fat or calories... I'm pretty good at making substitutions to bring those levels down. I just need some great ideas! They just should NOT be centered around rice, potatoes, or pasta! (not that I won't make lasagna a time or two... but I'm looking for OTHER ideas!) HELP ME OUT HERE!!! Please....

I make a lot of chili in the cold weather. I kinda make it up as I go and then figure out the points per cup. Usually it ends up being 1 or 2 points per bowl and it is warm and filling!
Soup is another good one for some people but it brings trouble for me, because I want lots of warm buttered bread with it, I stick to chili.

I'm a soup girl too, making several vats of different kinds over a couple of days, then freezing it; easy to grab. This week, mexican tomato lime soup (served with blue corn chips crunched up in it) and lentil soup. There are some fantastic thai soups that are easy to make too, tom yum and tom ka (one has coconut milk in the broth, which fattens it up, but you can find that in a low-cal version).
My lentil soup recipe is on my cooking blog; the mexican soup will be posted in a day or two. Email me if you want it earlier.
Another idea, for substituting rice: Is quinoa bad for you? It's rice-like, in that you can pour gravy-esque dishes over, still a grain.

I will be back to read the suggestions you get. I love rice, potatoes and pasta. I can eat them all in one dish, too, I just love them but I'd love to have other ideas.

you can bring some calories down in many dishes by using "turkey" instead of beef... I use ground turkey for meatloaf and eat turkey meatballs and "turkey burgers".. it gets you away for some of the fats in red meat, and is less calories then beef. Of course chicken stew is good too. Like you said, any substitutes helps!

OMG! Did you have to do that to me? *lol* That absolutely mouth watering pic you have there.... I LOVE that.... I'm HUNGRY. Again.
I know exactly what you mean about being cold. I was always freezing my butt of when I was younger and really skinny. I had to have a lot of clothes on in the winter time even if I'm only went outside for a short moment.
By the time I got some more fat it become better, but now with my back, I'm back in the same "put on all clothes I have routine" again!
Sorry, no recipe ideas for the moment - I love recipes with potatoes in all shapes. I'll be back if I happen to stumbled over some!

Will cous cous be able to substitute for the rice? I'm not sure of the carb levels. Or whole wheat rice? Is that the chicken stew above? It looks soooooo good!!!! So warm! ~Heavenly~
